The Point - Helles Lager
Brewed in more traditional German methods with lower and longer temperature rests, a long and cool fermentation, and hopped with Saphir and Saaz. After driving to nowhere on a gravel road the chosen pull-off is lined with large marigold greens still yet to flower while the skins of sapodilla lie underneath their towering progenitors. In a nearby house a tin of irish oats is left open on the counter, microscopic dust from inside catching the occasional breeze, when hunger wins over and honey is drizzled over a warmed biscuit after a tray of peach danishes were just formed before baking

Skald - Light Lager (4%)
German malt and a single decoction with American grown Saaz Hops, fermented under pressure with our Czech Lager yeast to create natural carbonation. The hills are alive with the various flashes of color from newly sprouted spring flowers, the sight as satisfying as the "pop" from a just-peeled tube of biscuits with a single lemon drop candy dancing from cheek to cheek and tooth to tooth. It may have been from a forgettable distraction, but the freshly cut broad leafed herbs which were intended to be dispersed over creamy polenta found their way atop an undisturbed bowl of flaky wheated cereal endorsed by famous athletic professionals

Baas - Hammer Lager (5%)
Brewed for those in this rocky commonwealth that labor hard and need a beer after work that feeds the soul, mug after mug. A touch of darker malts and an amazing German hop, Saphir. A familiar but unknown presence stands tall by a fire speaking Spanish telling a young person something indecipherable while it rains on the ridge line. Three hundred years later as bales of hay are lofted and a new fence post is driven on the first day of a heatwave break time is announced by striking a specific rock, ringing out the call to sit on the largest piece of limestone in the shade one can find and wait patiently for a friendly delivery of chocolate sorbetto

Reckoner - Lightly Smoked Pale Lager (6%)
Brewed with local pilsner malt and elevated with a subtle dose of the finest German smoked malts, hopped in the coolship exclusively with Hersbrucker. Notes of being enveloped by luxurious fernery in a Moroccan tea room while steamy procelain cups of Genmaicha wisp by, brushing warm marmalade glaze atop a fully proofed couronne, and cashed road trip apple pipes

Tutto Pils - Italian Pilsner (5%)
Offering our beers to the folks of south Philly while they feast on the best Abruzzese cuisine outside of Italy, Le Virtu has supported our humble little brewery since we started brewing. A single decoction of all Pilsner malt to highlight the sweet grain flavors and dry hopped with German Saphier, it just makes sense we collaborated together on an Italian Pilsner, an incredibly floral lager. Unseen honeysuckle hidden behinid Cypress trees, tropical fruit skins near a machine churning gelato sweetened with apples from a far away land

The Peak - Pilsner (5.75%)
100% Pilsner malt, 100% Michigan grown Saaz hops, a long cool fermentation on our lager yeast. Poured from our Czech side pull faucet. While walking the rows, your fingers held delicately waist height tracing the controus of the grape leaves, crunching white summer flowers below with every step, the resulting whirlwind of fragrance so strong as if a chimera. You find yourself eyes closed and head thrown back, spinning with arms outstretched, your chest as if it is trying to touch the sky

Alt Geld - Double Alt Bier (7.5%)
This beer was so much fun to brew with our very good friend Andrew from Human Robot. Featuring a blend of German Pilsner and dark Münich malts (with a touch of roasted grains), a very long extended double-ish decoction, hopped with Hersbrucker and Saaz, and fermented nice and cool. A bold statement of friendship. Up in the rafters of a dilapidated old castle she wears an oversized tiara and has displayed apple slices drizzled with butterscotch and a single dark crimson bing cherry as if a sacrifice. Down in the hearth, molasses bread morsels are grilled over an open fire next to roasting persimmons while pretzel rods are dipped in rich German chocolate

ALES

 

Spectral Skies - Dry Hopped Grisette (4.2%)
This one was fun to make for you. We used lots of wheat and spelt, hopped this beauty in the kettle with European lovelies and a touch of Mosaic, then dry hopped it with second use Citra, Nectaron, and Eukanot. While drinking gin martinis garnished with preserved lemons the bartender is preparing orange wedges covered in sal de gusano to be consumed pre-mezcal while they extol the glories of Georgian (the country) white wines aged in buried amphora. Through the window a group of children on the street are seen blowing small palmfuls of white pepper into oncoming wind trying hard not to react but one lets out a ferocious sneeze which startles another who flings his melting mango ice cream in the air which comes down like drippy white pain on his best friend's perfectly pink cotton candy

Raconteur - ESB (6%)
This is the first beer we made using local grain from Double Eagle, a PA maltster in Huntingdon Valley.  Because the grain is inherently more fresh than the European malt we typically use the expressions of the soil, of the rocky terrain, of the strong summer sun are vibrant and pronounced. In wanting to highlight their grain we thought an ESB would be a fitting canvas, hopped with the old faithful East Kent Goldings. Sitting atop tall towers of hay bales drinking barrel aged Jamaican rum straight outta the bottle they began to have a Meyer lemon fight, single elimination style. The winner was crowned with dried sunflowers as a headdress and presented with fluffy whole wheat loaves and an abundance of roasted honey nut squash

Exhumer - Dry Stout (5.5%)
There is none more black. Brewed with a blend of Marris Otter and Pilsner malts for the base and accentuated with various darker grains then hopped gently in the kettle utilizing East Kent Goldings. For years I've been tortured trying to determine who was the first person to put a whole wintergreen tree inside their home in the name of celebrating the changing of seasons? Such a weirdo. If it were up to me I'd adorn a entire house like the catacombs with scattered little alters sacrificing various things like a jug of date molasses, expensive Belgian chocolates, or a wheel of washed rind Italian mountain cheese

Concurrent Pathways - West Coast Pale (5.5%)
A blend of pale and pilsner malts with the tiniest addition of crystal malt for an embellished backbone then modestly dry hopped with Cascade, Centennial, and Chinook. Passing through that fresh piney goodness you ascend to the summit breathing in that ridgeline air high above the sequoias stuffing wafers of the (va)nilla type into your gullet. Returning to camp a crowd surrounds a newly discovered deep dark pit left empty for generations that was just filled surreptitiously with marasca cherries as interstellar apples soar overhead and someone, we'll never know who, claims they have seen and smelled the odd offspring of a cantaloupe and a grapefruit and that by gosh we will love them unconditionally for being who they are.

Lairds Barrel Absent Void - Imperial Stout (12%)
A beer we were excited to make, our Absent Void imperial stout aged for a few months in a barrel from one of our favorite distilleries, Laird's who has been making apple brandy since colonial times in New Jersey. Perfectly paired with a neat pour of their 12yr aged brandy. Rich yet ethereal, a dense plume of chocolate smoke hangs still in a forest of banyan trees dripping from an afternoon rain, the falling precipitation a small offering to a sprouting grape vine

Theurgist - Mild (4.6%)
A lovely combination of Marris Otter malt from the UK with some darker grains for flavor, color, and body and hopped with gorgeous East Kent Goldings. After hours of an exasperating experience e navigating through a stalagmite maze deep in a dark dank cave the smell of lemongrass being dried over a fire led the participants to freedom, all congratulated with tall old fashioned sodas. A simple meal was had for dinner but it’s how closer was a real hit: a warm dish of pear streusel, followed by luxuriously silky milk chocolate truffles and a small dram of a northern alpine digestif

Didn't Land - Pale Ale (4.5%)
A touch of flaked oats made this lil guy reaaaaaaal smooth, and a generous dry hopping with Mosaic and Chinook brought home the bacon. While driving down a sandy dry road a small stand apperas on the left selling New Mexico's finest first of the season apricots, a gagle of juicyfruit fanny packs guzzle frehsly squooz'd OJ, a redundant offering of key lime mini pies and salty margaritas

Io, Saturnalia - Saison (9%)
In celebration of the solstice we included a medley of grains, a touch of house aged hops, and a hint of dark Belgian sugars. As the candle flickers you appreciate the many contours of the cracked leather satchel which has dutifully transported the finest Darjeeling to this exact moment, a strong scent of caraway seed emanates: somehow as if a mint bush spontaneously combusted for the entirety of its existence. An edifice of the past but still held as sacrosanct the freshly fastened garland welcomes all, an invitation to sit and behold the Bûche de Noël, fingers taking swipes of the few bits of excessive buttercream while rotund persimmons sit and stare as if watchmen who have all dozed off knowing that on this one night there are no foes in the world

MIXED FERMENTATION

 

Tiznit - Tart Lemon Dill Saison (5.5%)
This is an old favorite our brewer Zach created while working with his good pals at Forest & Main. Brewed with a mix of grains and lots of our house aged hops then fermented in stainless steel. Reconditioned on a lemon-dill oleo saccharum. On an early spring morning the mountain sky opens up and a pleasant drizzle falls as fine as powdered white pepper. Upon returning home gin martinis are stirred and garnished with preserved lemon, a total treat paired with spears of fresh cucumber while sitting next to the bouquet of flowers you decided to feed milk instead of water

Our Io, Saturnalia after being set aside on our house mixed culture then blended with a small amount of our Peach Saison before keg conditioning. Bright, fun, and bone dry

Io, Saturnalia Reserve '22 - Aged Sour Holiday Saison (9.5%)
Brewed with a medley of malts, house-aged and European hops and a hint of dark Belgian candy sugar, it was initially fermented on our clean saison yeast but was later introduced with a mixed culture to promote some acidity and funkiness

Io, Saturnalia Reserve '23 - Aged Sour Holiday Saison (9.5%)
Made in a very similar fashion to last year with a mix of malts and European hops but with a more restrained mixed culture fermentation. This year's shows  delicate tartness and balance with hints of cherries and dried plums, some funky chocolate, and holiday breads that are spiced just right

Ake - Smoked Grisette w/ Sour Cherries (6%)
Orginally brewed as a smoked Grisette, a saison style from Belgium made with wheat and fermented in stainless steel, we later introduced 300lbs of Montmorency Cherries from the amazing folks at Three Springs Farm. Big notes of aforementioned fruit with a mineraly smokiness, beautiful acidity that rides a big red wave, and a mouthwatering dryness that reminds us of being blissed out mid summer
