Skald - Light Lager
German malt and a single decoction with American grown Saaz Hops, fermented under pressure with our Czech Lager yeast to create natural carbonation. The hills are alive with the various flashes of color from newly sprouted spring flowers, the sight as satisfying as the "pop" from a just-peeled tube of biscuits with a single lemon drop candy dancing from cheek to cheek and tooth to tooth. It may have been from a forgettable distraction, but the freshly cut broad leafed herbs which were intended to be dispersed over creamy polenta found their way atop an undisturbed bowl of flaky wheated cereal endorsed by famous athletic professionals

Fourth Anniversary Lager - Dry Hopped Pilner (5%)
We turned 4 years old and brewed a celebratory lager that will help us learn how to tie our shoes. German pilsner malt and a touch of undermodified malt were mashed together and a single decoction really amplified a soft yet comforting malt backbone. As we do, we added some of our house aged hops while filling the kettle to encourage a subtle earthliness and enhance head retention, but we also finished the boil with a healthy addition of Cashmere hops in the kettle followed by a restrained dry hopping (also with Cashmere) prior to lagering. This beer highlights much of who we are, passionate about incorporating historic and timeless practices all while utilizing the modern sentiments, flavors, and innovations. We think this beer tastes like tomorrow and yesterday, from far away yet so near, as if the future was behind us and the past so tangibly revealed before us.

Tutto Pils - Italian Pilsner (5%)
It's been nearly 200 moons since our brewer Zach's life changed forever upon meeting his platonic life partner Chris, a haphazard relationship that has crossed political, geographic, and sometimes spiritual boundaries. Together they inspire one another to delve deeper in their respective crafts and stimulate curiosities in all realms of the beverage and culinary arts. As the manager of Le Virtu Chris has supported our humble little brewery since the beginning, offering our beers to the folks of south Philly while they feast on the best Abruzzese cuisine outside of Italy. It just makes sense we collaborated on an Italian Pilsner, an incredibly floral lager perfectly paired with Le Virtu's classic single-strand pasta, Maccheroni alla Mugnaia. With a single decoction of all Pilsner malt to highlight the sweet grain flavors and dry hopped with German Saphir this beer is what Zach and Chris have always dreamed of. As the path turns it's clear honeysuckle are blooming but they remain unseen hidden in the dense forest of tall slender Cypress trees, one of which casts a long matchstick-thin shadow over a copper sundial with a fine patina. "Don't slip on the skins," a warning from the person carving tropical fruits into ornate and distinct shapes to adorn a tray of canele as a nearby machine slowly churns ephemeral gelato sweetened with apples from a far away land

Baas - Hammer Lager (5%)
Brewed for those in this rocky commonwealth that labor hard and need a beer after work that feeds the soul, mug after mug. A touch of darker malts and an amazing German hop, Saphir. A familiar but unknown presence stands tall by a fire speaking Spanish telling a young person something indecipherable while it rains on the ridge line. Three hundred years later as bales of hay are lofted and a new fence post is driven on the first day of a heatwave break time is announced by striking a specific rock, ringing out the call to sit on the largest piece of limestone in the shade one can find and wait patiently for a friendly delivery of chocolate sorbetto

The Peak - Pilsner (5.75%)
Poured off the czech-style sidepour faucet. 100% local Pilsner malt, 100% Michigan grown Saaz hops. While walking the rows, your fingers held delicately waist height tracing the controus of the grape leaves, crunching white summer flowers below with every step, the resulting whirlwind of fragrance so strong as if a chimera. You find yourself eyes closed and head thrown back, spinning with arms outstretched, your chest as if it is trying to touch the sky

Kith N Kin - House Dinkle Lager (4.2%)
A single decoction with spelt created a gold-hour lager so e hopped it with some house-aged Hersbrucker in the coolship followed by a dry-hopping with Opal. After gathering a bright bucket of glacier water in a new tin can the precious liquid is heated gently, delicately poured over sencha green tea, later to be enjoyed with crumbly chamomile biscuits. Another lemon curd with its intricate mandala of five spice is placed alongside a tall glass of tangerine juice proudly awaiting your arrival.

The Point - Helles Lager (4.5%)
Brewed in more traditional German methods with lower and longer temperature rests, a long and cool fermentation, and hopped with Saphir and Saaz. After driving to nowhere on a gravel road the chosen pull-off is lined with large marigold greens still yet to flower while the skins of sapodilla lie underneath their towering progenitors. In a nearby house a tin of irish oats is left open on the counter, microscopic dust from inside catching the occasional breeze, when hunger wins over and honey is drizzled over a warmed biscuit after a tray of peach danishes were just formed before baking

ALES

 

Tullamore Dewd - Dry Oat Stout (3.5%)
 One of our first and most beloved beers, dedicated to a dear friend and brother. Cancer Sucks. Steaming plum pudding with gooey chopped dates, the most familiar handsome face enjoying apple butter on over-toasted black bread, raising a glass together in and old seaside pub.

Absent Void - Imperial Stout (11%)
This one is for your heart health, like a blanket for your soul, made with malts sourced from the island formerly known as the Queen's land with some additional dark candied sugars from across the Channel. As you descend the stairs still-burning embers remind you of last night's glories, overflowing with whiskey and apple brandy barreled dreams (message!) and an abundance of crumbly cheesecake crusts. It's bread and dessert season, with cinnamon raisin swirls throughout your flan and chocolate covered cherries studded in your yeasted loaf, so let's get all fat and sassy

Sandita - Hazy Pale Ale (6%)
This hazy lil thing was brewed with a smidgen of oats and dry hopped heavily with Citra, El Dorado, and Grungeist. After finding the world's tiniest melon the celebration began with brimming cups full of kiwi wine and waffles strewn with blood orange rind. Passing oh so slowly above, big fluffy white clouds take the form of extra fuzzy apricots and it becomes obvious the neighbor is working from the intense aroma of freshly cut sativa

Tura - Spring Stout (7.7%)
With lots of British pale malts and darker grains we mashed this beer at lower temperatures to promote a dry finish and added a touch of dark Belgain candi syrup which not only bossted the ABV, but also contributed to a subtle earthiness to match the modest noble hops. A spoonful of pomegranate molasses before an early spring forest stroll, a slate quarry at peak productivity, toasted coconut as if a snow squall falling from a sky of chocolate sky while nibbling the nubbin ends of waffle cones

Dead Leaves - Dark Saison (5%)
European malts, some in the darker hues, with Hersbrucker, Saaz, and house aged hops. An old stone street in an old stone town abruptly stops at the last dwelling on the left, right past the fudge shop, a lone pine tree blocks the way and a small twig snaps off. Foraging for wild squash blossoms that will be stuffed with forest herbs proves to be quite a challenge so a quick break of munching on concord grapes should sharpen the senses

Concurrent Pathways - West Coast Pale Ale
A blend of pale and pilsner malts with the tiniest addition of crystal malt for an embellished backbone then modestly dry hopped with Cascade, Centennial, and Chinook. Passing through that fresh piney goodness you ascend to the summit breathing in that ridgeline air high above the sequoias stuffing wafers of the (va)nilla type into your gullet. Returning to camp a crowd surrounds a newly discovered deep dark pit left empty for generations that was just filled surreptitiously with marasca cherries as interstellar apples soar overhead and someone, we'll never know who, claims they have seen and smelled the odd love child of a cantaloupe and a grapefruit and that by gosh we will love them unconditionally for being who they are

Topologist- Pub Ale (3.5%)
In doing research on historic British beers we got inspired to brew up this lil ditty with all British malts, predominantly German hops and a touch of American hops. Dark amber in color, a faint bitterness and very gently carbonated. As large boulders tumble through the timberline exploding into an unfathomable chaos the coffee was left in its canvas bag unroasted while subtle ideas of pomelos are somehow the primary focus

MIXED FERMENTATION

 

Two Hills - Bier de Garde (6.75%)
We've been good friends with the dreamy people at Second District in South Philly for years and after both of our brewers realised their 40th birthdays were within weeks of each other this long awaited collaboration came to fruition. Brewed with 100% Munich malt we added a big ol' heap of our house aged hops in the coolship then let it ferment warm on our lager yeast (weird) then conditioned it on our saison yeast at cool temperatures (weirder) for many moons. Rich, dry, refreshing and creamy all at the same time. We think it's glorious. A thick slice of rye bread crusted in caraway seeds sits on the butcher block next to a forgotten guava that's oh so ripe beautifully displayed in a wreath of spruce tips. Outside you lie in a bed of creeping thyme munching on a perfectly crisp, sugary pear remembering you need to buy more cherry throat candies

Voces Chorum Rose '23 - Saison (6%)
Saison w/ Grapes Every year when the grapes at Vox Vineti are being processed our brewer is on site at the vineyard to help and once the wines have been fully extracted from the pomace it is then brought back to our brewery, shoveled into a stainless steel tank and made ready for a young saison to be blended in. After a few moons of melding together the now pink stained beer is racked off the fruit, bottled and kegged, and laid rest for even more moons. Over that time carbonation is created and a patient maturity and dynamicism slowly reveals itself. This years release from the '22 harvest features Cabernet Sauvignon and Barbera grapes and is incredibly full in body and has an immensely expressive flavor progression yet finished bone dry. Perfect for sitting outside in the warm sun as you watch the world slowly, day by day, as it transroms itself into a green giant

Brewed with a medley of malts, house-aged and European hops and a hint of dark Belgian candy sugar, it was initially fermented on our clean saison yeast but was later introduced with a mixed culture to promote some acidity and funkiness

Made in a very similar fashion to last year with a mix of malts and European hops but with a more restrained mixed culture fermentation. This year's shows  delicate tartness and balance with hints of cherries and dried plums, some funky chocolate, and holiday breads that are spiced just right

Eyes to the Skies - Barrel Fruited Saison (7%)
This coolshipped saison rested in barrels for many moons and was later blended together and reconditioned on fresh orange peels, freshly hand-squeezed orange juice, and the tiniest bit of vanilla. During that fermentation Grungeist hops were added for a beautiful aroma and flavor. Further conditioned in the bottle for natural carbonation. Having baptized your new sneakers with chilled Gerwurtraminer you adorn them lovingly ready for a preliminary stroll along the lily pads but the smell of elderflower arrests your gait. A moss covered path laid with thin squares of slate, sprouting ground cover in between, leads to a wooden gazebo seemingly nowhere but everywhere, orange trees acting as an edible barrier keeping time and age just out of reach.

Slender Spindle - A Tart Saison with Peaches (5%)
Brewed with wheat and house-aged hops, fermented in stainless steel with our clean saison yeast, then rested on peaches from our friends at Three Springs Farm. Bottle and keg conditioned for natural carbonation. An ocean breeze full of briny fragrance sends a sheer chill piercing through your chest and radiating down through your toes causing a brief sensation of levitation, like a pillow of stone fruit custard was slowly inflating below your feet while you dream of a Japanese tea ceremony. Calm, serene, and tranquil and yet at the same time an overactive and stimulated brain firing like small explosions on Chinese New Year.

Ake - Smoked Grisette w/ Sour Cherries (6%)
Orginally brewed as a smoked Grisette, a saison style from Belgium made with wheat and fermented in stainless steel, we later introduced 300lbs of Montmorency Cherries from the amazing folks at Three Springs Farm. Big notes of aforementioned fruit with a mineraly smokiness, beautiful acidity that rides a big red wave, and a mouthwatering dryness that reminds us of being blissed out mid summer
